Beef Wellington has long been a dinner party favourite and deservedly so. However, as any cook knows, serving up red meat without a choice these days can be viewed as a brave move. The answer is these superb individual Beef Wellingtons. Each Wellington is traditionally crafted using tender English Fillet steak topped with chicken liver pate and mushrooms. They are then encased in the lightest of puff pastries. If it's cold outside then a comforting green veg and mash work a treat, but they work just as well on a warm Summer's day with a salad and a glass of claret.
